In HUNGER, we spoke to Bjorn Shen (Restauranter of Artichoke, Overdoughs and Bird Bird) and Michelle Lai (Event Manager at Open Farm Community) about the innate passion for food that Singaporeans share, the act of eating, the transformation of the personal kitchen, the cult of temporary pop ups and how we might reimagine eating in the 22nd century.

SPEAKERS

Bjorn Shen is chef and owner of Artichoke, a fiercely food-driven, Middle Eastern-inspired restaurant in the heart of Singapore’s arts district. Bjorn holds a Bachelor’s in hospitality, a Masters’ in marketing, currently lectures at the Culinary institute of America in Singapore, and sits on the Industry Advisory Board for Kaplan College’s School of Hospitality and Tourism Management. Prior to all this, he dropped out of Le Cordon Bleu, a fact he isn’t ashamed to divulge.

Michelle Lai's interest in food was honed during her time in school, spent researching and writing on food security issues in the developing and developed contexts. Her travels to these places led her to many enriching conversations with individuals in different farming contexts and communities, and back again to Singapore, where she wanted to learn what it meant to grow her own food, with Edible Garden City. She is now working as an Events Manager with Open Farm Community, a restaurant that hopes to bring about good, fresh food, and community together around the table.
